Jean-Marc Brocard is one of the leaders in biodynamic wines in Chablis. The Brocard Vieilles Vignes Sainte Claire is from a Massal selection of very old vines planted after WWII that gives tiny yields of around 30 hl per hectare. The vineyard sits on southwest-facing exposures in class Chablis upon beds of Kimmeridgian limestone soils. The wine is fermented with indigenous yeasts in stainless steel, no battonage and allowed to complete malolactic fermentation. It ages on its lees in stainless tanks for added complexity. Aromatically the wine is full of yellow fruits, such as lemon and crunchy apples, mango, and a hint of salty air. On the palate, the wine is a touch oily, with notes of marzipan, crushed rocks and delicate lemon curd. Possibly superior to many Premier Cru wines.
